What is Culinary Medicine :
Culinary medicine, a new educational and nutritional approach to improving eating behaviours, which focuses on skills such as food shopping, storage and meal preparation. At Plant Based Academy we adapt and extend upon this new concept of bridging culinary art and nutritional science. Therefore we describe Culinary Medicine as a unique combination of nutrition and culinary knowledge to provide a framework for which to prepare medicinal phytonutrient rich plant based foods in a certain way to ensure maximum nutrient bioavailability whilst enhancing flavour, nutrition and contributing to health outcomes . Hippocrates said Let Food Be Thy Medicine & Medicine Be Thy Food, But actually there is a huge gap between food and medicine and many people do not understand which foods are medicine. Culinary Medicine bridges this gap between food and medicine. Culinary Medicine is medicinal foods inclusive of polyphenols such as flavonoids, Lignans, phenolic acids and stilbenes, terpenes such as thiols, carotenoids, and saponins and polysaccharides such as beta glucans to name just a few of the major phytochemicals required for optimal health and longevity. Culinary Medicine encourages a daily food plan driven by inclusion of these special phytochemicals and abundant in bio available micronutrients and adequate macronutrients.
